I have a little secret chef tip for you, this could help you win. In the fridge you place fresh mussels in a bowl and pour over oats into the open shells and leave them for 2-3 days they act as food for the mussels basically feeding them and making them plumper, try it, it really works, drop me a line if you need more detail. I would then serve them on a whiskey flavoured porridge like risotto made with oats, sounds complicated but very easy!
